The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.


The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• Pizza Hut, 2711 S Hazel St., Suite B. Date of inspection Dec. 15. Trash cans containing food residue need to be covered when not in continuous use (Not in compliance; repeat violation.)


• Cedar Cabin, 1703 University Drive. Date of inspection Dec. 19. Closed at time of inspection.


• Ameca Mexican Restaurant, 7401 Dollarway Road, White Hall. Date of inspection Dec. 19. Container of lemons should not be stored directly on ice for customer consumption (Not in compliance; corrected on site during inspection.) Wiping cloths should be kept in a sanitizer solution between use (Not in compliance; repeat violation.) Ice scoops in front stored improperly (Not in compliance; corrected on site during inspection; repeat violation) Plates and bowls should be stored covered or inverted to prevent contamination (Not in compliance; repeat violation.) Single service items should be stored covered or inverted to prevent contamination (Not in compliance; repeat violation.) Single-use gloves should only be used for one task and discarded when interruptions occur (Not in compliance; repeat violation.) Hand washing sink is leaking — needs to be repaired (Not in compliance; repeat violation.) Cardboard boxes should be removed on floors in kitchen (Not in compliance; repeat violation.)


• Jefferson Regional Medical Center, 1600 W. 40th Ave. Date of inspection Dec. 16. Hands should be washed between changing tasks (Not in compliance; corrected on site during inspection.) Meat slicer needs to be properly cleaned and sanitized (Not in compliance; corrected on site during inspection.)


• Pine Bluff Schools food warehouse, 105 S. Walnut St. Date of inspection Dec. 21. No violations reported.


• Fiesta Mexicona. 3141 W. 28th Ave. Date of inspection Dec. 19. Food being stored in coolers and dry storage and ice bin needs to be covered (Not in compliance; corrected on site during inspection; repeat violation.) Food out of its original package needs to be labeled with common name of food it contains (Not in compliance; repeat violation.) All outer openings should be protected against the entry of pests; hole in wall leading to the outside observed (Not in compliance; repeat violation.) Single service items should not be reused to store food in (Not in compliance; repeat violation.) Shelving throughout kitchen needs to be cleaned (Not in compliance; repeat violation.) Trash cans containing food residue should be covered when not in continuous use (Not in compliance; repeat violation.) Floors and walls — especially behind cooking equipment — need cleaned (Not in compliance; repeat violation.) Some floor tiles throughout kitchen need to be replaced (Not in compliance; repeat violation.) Vent hood needs to be cleaned (Not in compliance; repeat violation.)
