The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.


The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• Subway, 3705 Camden Road. Date of inspection Jan. 20. A hand-washing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing (Not in compliance; corrected on site during inspection.)


• Owens Food & Supplies Inc., 9 Portea Drive. Date of inspection Jan. 19. Observation: No current health permit posted (Not in compliance; repeat violation.)


• Jack Robey Junior High School, 4101 Olive St. Date of inspection Jan. 23. Food debris was observed on meat slicer. Meat slicer was cleaned and sanitized during inspection (Not in compliance; corrected on site during inspection.) Date marking was not observed on sliced meat container in walk in cooler. Date marking was put on meat container during inspection (Not in compliance; corrected on site during inspection.) Food trays were observed stored face up on rack. Top food trays were inverted to cover others during inspection (Not in compliance; repeat violation; corrected on site during inspection.) Single service hamburger bun package was observed being reused to store sliced ham in walk in cooler. Ham in hamburger bun package was discarded during inspection (Not in compliance; repeat violation; corrected on site during inspection.) Single service trays observed stored face up and uncovered. Trays were inverted during inspection (Not in compliance; repeat violation; corrected on site during inspection.) Water not running in hand-washing sink nearest the office. • Handy Mart, 6605 U.S. 79 South. Date of inspection Jan. 24. Observation: Need chlorine test strips to ensure proper sanitizing solution concentration (Not in compliance; repeat violation.) • Strachota Senior Citizen Center, 801 E. Eighth Ave. Date of inspection Jan. 24. Single service container being used to store sugar in observed being reused (Not in compliance; repeat violation.) Wiping cloth observed laid out on counter top near hand washing sink with tea maker on it. Wiping cloths should not be used on counter tops that are exposed to splash, spillage, or other food soiling Not in compliance; repeat violation.)
