The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.


The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• Southwood Elementary School, P.O. Box 7678. Date of inspection Jan. 24. Automatic dishwasher is not dispensing sanitizer; kitchen manager changed out the containers of the sanitizer to correct this issue during inspection (Not in compliance; corrected on site during inspection.) Mini cinnis sitting out not within safe temperature range; manufacturer directions say keep frozen and kitchen manager informed me that they have been sitting out since yesterday; mini cinnis were discarded during inspection (Not in compliance; corrected on site during inspection.) Wiping cloths observed sitting out on counter tops; wiping cloths should be kept in a sanitizer solution between uses; wiping cloths were put into bucket of sanitizer water during inspection (Not in compliance; repeat violation; corrected on site during inspection.) Clean food service trays observed being stored face up; top trays were inverted during inspection (Not in compliance; repeat violation; corrected on site during inspection.) Single service mayonnaise jar observed being used to store pickles in found in the refrigerator should not be reused. • CASA Women’s Shelter, 1113 State St. Date of follow-up inspection Jan. 30. No violations reported.


• Mazzio’s Italian Eatery, 8110 Sheridan Road. Date of inspection Jan. 25. Observed open package of flour being stored on shelf in kitchen; flour should be stored in a covered container or by other means to prevent contamination; flour was covered during inspection (Not in compliance; corrected on site during inspection.) Chemical bottle observed being stored on dry storage shelf with food product; chemical bottle was moved during inspection (Not in compliance; corrected on site during inspection.) Unidentified bottle of chemical observed on shelf in kitchen; bottle was labeled with common name of the chemical it contains during inspection (Not in compliance; corrected on site during inspection.) Observed dry wiping cloth next to pizza prep cooler catching pizza sauce; dry wiping cloths should be free from food debris; wiping cloth was removed during inspection (Not in compliance; repeat violation; corrected on site during inspection.) Seal on walk in freezer door is broken and needs to be repaired (Not in compliance; repeat violation.) Personal fan is unclean and needs to be cleaned (Not in compliance; repeat violation.) Shelves throughout kitchen are unclean and need to be cleaned (Not in compliance; repeat violation.) Trash cans containing food debris should be covered when not in continuous use (Not in compliance; repeat violation.) Some ceiling tiles throughout kitchen are damaged and need to be replaced (Not in compliance; repeat violation.) Floors in kitchen, especially under dry storage shelves and equipment, are unclean and need to be cleaned (Not in compliance; repeat violation.) Vent hood over pizza oven is unclean and needs to be cleaned (Not in compliance; repeat violation.) Light bulb in dry storage does not have a protective shield over it; light bulb should be properly shielded or be shatterproof (Not in compliance; repeat violation.)


• Covenant Recovery Inc., 3201 W. Pullen St. Date of inspection Jan. 26. Food temperature measuring device shall be provided and readily accessible for use in ensuring proper food temperature (Not in compliance; repeat violation.) Clean equipment and utensils shall be stored covered or inverted in as self-draining position that allows for air drying (Not in compliance; repeat violation.) Observation: All trash can need lids when not in continuous use (Not in compliance; repeat violation.)
