The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.


The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• Addi’s Corner, 101 N. Blake St. Date of inspection March 22. Bottled soda should be not be stored in direct contact with ice used for customer consumption (Not in compliance; corrected on site during inspection.) Thermometer not observed in pizza prep refrigerator. Thermometer needed in all coolers holding food that must stay cold (Not in compliance; repeat violation.) Single service plates are being stored face up. Single service plates should be stored in original packaging or by other means that protects them from contamination until used (Not in compliance; repeat violation.) Test strips not observed during inspection. Test strips are needed to test sanitizer strength (Not in compliance; repeat violation.) Floors, especially under equipment in kitchen area, are unclean and need to be cleaned (Not in compliance; repeat violation.)


• Two Brothers One Stop, 2215 S. Blake St. Date of inspection March 21. Drying of wiping cloths should be in accordance with regulations. Wiping cloths shall be placed in a sanitize solution after each use (Not in compliance; repeat violation.) Observation: Need chlorine test strips to ensure proper sanitizing solution concentration (Not in compliance; repeat violation.) Observation: Need to clean counter tops in establishmen (Not in compliance; repeat violation.)


• Pine Bluff Country Club, 1100 Country Club Lane. Date of inspection March 24. Observed food in cooler being stored uncovered; food must stay covered when being stored; food was covered during inspection (Not in compliance; corrected on site during inspection.) Chemical sanitizer not dispensing properly in automatic dishwasher (Not in compliance; corrected on site during inspection.) Date marking needed on ready-to-eat food held for more than 24 hours; ready-to-eat foods were date marked during inspection (Not in compliance; corrected on site during inspection.) Leak observed in dishwasher-needs repaired (Not in compliance; repeat violation.)


• Gandy Elemantary School, 400 Gandy Ave., White Hall. Date of inspection March 27. No violations reported.


• Taylor Elementary School, 805 West St. White Hall. Date of inspection March 27. Observed pinto beans and orange juice sitting out to thaw; food should only be thawed using approved methods; pinto beans and juice were placed in the walk-in cooler during inspection (Not in compliance; repeat violation; corrected on site during inspection.)


• Gould Youth Ministries, 1219 S Main St., Pine Bluff. Date of construction inspection March 28. Deflector shield on ice machine is unclean and needs to be cleaned. Deflector shield was cleaned during inspection (Not in compliance; corrected on site during inspection.) Unidentified substance observed in an unlabeled bottle. Bottle was labeled with common name of substance during inspection (Not in compliance; corrected on site during inspection.) Thermometers are needed in all refrigerators holding food that must stay cold (Not in compliance; repeat violation; corrected on site during inspection.) Some wall tiles and floor tiles throughout kitchen are cracked and need to be repaired (Not in compliance; repeat violation.)


• Kwik Chek, 800 N. Bryant St. Date of inspection March 28. Discontinue consuming food, use of unapproved beverage containers, or use of tobacco in food preparation or ware-washing area. All employee drinks in the food preparation area must have a lid and a straw (Not in compliance.) A hand-washing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Hand washing sink should be used for hand washing only (Not in compliance.) Observation: Establishment need testing strips to measure the concentration of the sanitizing solution. To ensure proper cleaning of utensils (Not in compliance; repeat violation.)


• Kibb’s Bar-B-Que #2, 2117 University Drive. Date of inspection March 28. Ambient air and water temperature measuring devices should be accurate within 2 degrees of the intended range. Need thermometers in all cooler and freezer (Not in compliance; repeat violation.) Observation: The restroom doors do not self-closures on them (Not in compliance; repeat violation.)


• Delta Bryant Street Site, 1502 N. Bryant St. Date of inspection March 31. No violations observed during time of inspection.


• Subway, 5401 S. Olive St. Date of inspection March 29. A hand-washing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing (Not in compliance; corrected on site during inspection.)


• McDonald’s, 5501 Olive St. Date of inspection March 30. Paper towels needed at front hand washing sink. Paper towels were placed at hand washing sink during inspection (Not in compliance; corrected on site during inspection.) Hamburger patties should be covered while being stored in the freezer. Hamburger patties were covered during inspection (Not in compliance; corrected on site during inspection.) Observed a hold time longer than 4 hours on some food sitting out of temperature. Hold time was taken off and replaced with a 4-hour hold label (Not in compliance; corrected on site during inspection.) No thermometer observed in prep cooler. Some wiping cloths were observed sitting out on counter tops. Wiping cloths should be kept in a sanitizer solution between use.
