The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.


The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• McDonald’s, 5501 Olive St. Date of follow-up inspection April 4. Hamburger patties should be covered while being stored in the freezer; hamburger patties were covered during inspection. (Not in compliance; corrected on site during inspection.) Test strips not observed in establishment during inspection; test strips are needed to test sanitizer strength (Not in compliance; repeat violation.)


• La Petite Preparatory School, 704 Linden St. Date of inspection April 6. Restroom door near kitchen should be self closing (Not in compliance; repeat violation.) No current health permit posted (Not in compliance; repeat violation.)


• The Corner Cafe, 3907 Camden Road, Suite 4. Date of inspection April 6. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each hand-washing sink in food preparation, toilet and ware-washing areas (Not in compliance; corrected on site during inspection.) Food not in the original packages for use in establishment must be identified with the common name of the food (Not in compliance; repeat violation.)


• White Hall Yogurt Co., 7179 Sheridan Road, Suite 111, White Hall. Date of inspection April 7. Test strips needed in establishment to test sanitizer strength (Not in compliance; repeat violation.)


• Duck In and Go, 10501 U.S. 63. Date of inspection April 7. Hand-washing sink should not be used for any other purpose than washing hands; utensils in hand-washing sink were removed during inspection (Not in compliance; corrected on site during inspection.) Observed meat sitting out to thaw in sink; meat should only be thawed using approved thawing methods. Meat was placed in refrigerator to thaw during inspection (Not in compliance; repeat violation; corrected on site during inspection.) Used wiping cloths observed sitting out on counter tops; wiping cloths should be kept in a sanitizer solution between use (Not in compliance; repeat violation.) Single service trays observed being stored face up; single service trays should be stored in original package or by other means to protect them from contamination until used; single service containers were placed face down during inspection (Not in compliance; repeat violation.) Single service ice cream container observed holding onions in cooler; single service items should not be reused (Not in compliance; repeat violation.) Leak in deli cooler needs to be repaired (Not in compliance; repeat violation.)
