The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.


The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• Shop Wise, P.O. BOX 334, Redfield. Date of inspection May 15. Observation: Need chlorine test strips to ensure proper sanitizing solution concentration (Not in compliance; repeat violation.) Observation: Need to clean shelves where the meats are stored (Not in compliance; repeat violation.) Observation: All trash cans need lids; only need lids if they contain food residue and are not in continuous use (Not in compliance; repeat violation.)


• Motor Way Grocery, 3432 U.S. 65 South. Date of inspection May 1. Chemical bottles observed being stored next to clean dishes. Chemicals should be kept separate from clean dishes. Chemicals were moved during inspection. (Not in compliance; corrected on site during inspection.) Bag of onions should be stored at least 6 inches off of the ground (Not in compliance; repeat violation.) Food workers not wearing hair restraints while preparing food. Hair restraints must be worn by food workers (Not in compliance; repeat violation.) Observed wiping cloths sitting out on counter tops. Wiping cloths should be kept in a sanitizer solution between use (Not in compliance; repeat violation.) Single service cups at self service drink station observed being stored out of their original package and exposed to contamination. Single service items should be kept in their original packaging or by other means to protect them from contamination until being used (Not in compliance; repeat violation.) No test strips available in establishment to test sanitizer strength of sanitizer used. Test strips needed to test sanitizer strength (Not in compliance; repeat violation.) Trash cans in kitchen containing food residue should be covered when not in continuous use (Not in compliance; repeat violation.) All lights in kitchen should be properly shielded (Not in compliance; repeat violation.)


• Hot Rods, 6000 Sheridan Road. Date of construction inspection May 3. Clean dishes should not be stored on wiping cloths (Not in compliance; repeat violation.) Light bulb above ware washing area should be shielded or shatterproof (Not in compliance; repeat violation.)


• Lucky’s Cafe, 310 E. Fifth Ave. Date of inspection May 4. Observed clean utensils being stored face up in container. Clean utensils should be stored face down or in another manner to prevent contamination. Utensils were placed face down during inspection (Not in compliance; repeat violation; corrected on site during inspection.) Restroom door self closure not properly working. Restroom door should be self closing (Not in compliance; repeat violation.) Trash cans containing food residue should be covered when not in continuous use (Not in compliance; repeat violation.)


• New China Town, 2801 Olive St., 9-A. Date of follow-up inspection May 5. Observed food in walk in cooler being stored uncovered. Food being stored should be covered to prevent contamination. Food was covered during inspection (Not in compliance; repeat violation; corrected on site during inspection.) Hot holding temperatures of potatoes on buffet are out of safe range (must be 135 degrees F or above). Potatoes were pulled off of buffet during inspection and some were placed back on at a temperature of 166 degrees F (Not in compliance; repeat violation; corrected on site during inspection.) Observed openings in doors in dry storage. All outer openings should be protected against the entry of pests (Not in compliance; repeat violation.) Observed containers of seasonings stored directly on the floor. Food should be stored at least 6 inches off of the floor (Not in compliance; repeat violation.) Used wiping cloths observed sitting out on counter tops. Wiping cloths should be kept in a sanitizer solution between use (Not in compliance; repeat violation.) Floors, walls, and ceilings throughout establishment, especially in walk in cooler, near vent hood, under shelves, and in dry storage, are unclean and need to be cleaned (Not in compliance; repeat violation.) Cardboard boxes should not be used to line flooring in walk in cooler with (Not in compliance; repeat violation.) Vents on the outside of vent hood are unclean and need to be cleaned (Not in compliance; repeat violation.)
