The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.


The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• Mini Mart, 1110 W. Sixth Ave. Date of follow-up inspection June 16. Need test strips to test sanitizer strength. (Not in compliance; repeat violation.)


• Cranford’s White Hall deli, 8503 Dollarway Road. Date of inspection June 20. Inside of microwave is unclean and needs to be cleaned. Microwave was cleaned during inspection (Not in compliance; corrected on site during inspection.) Observed wiping cloths sitting out on counter tops. Wiping cloths should be kept in a sanitizer solution between use. Wiping cloths were placed in sanitizer solution during inspection (Not in compliance; repeat violation; corrected on site during inspection.) Equipment in deli, especially outside of fryers and pizza oven, is unclean and needs to be cleaned (Not in compliance; repeat violation.) Some flooring throughout deli is damaged and needs to be repaired (Not in compliance; repeat violation.) Floors, especially behind equipment, are unclean and need to be cleaned. (Not in compliance; repeat violation.)


• Super 1 Foods deli, 2800 Hazel St. Date of follow-up inspection June 16. Observed opened deli meats in packages dated more than 7 days ago. Opened deli meats held for more than 7 days should be discarded. Deli manager told me that the deli meats were dated on wrong scale with wrong date. Deli meats were dated with correct scale during inspection (Not in compliance; repeat violation; corrected on site during inspection.)


• Dollar General Store, 713 University Drive. Date of inspection June 21. Observation: No current health permit posted (Not in compliance; repeat violation.)


• Chili’s, 5511 Olive St. Date of inspection June 22. Drying of wiping cloths should be in accordance with regulations. Wiping cloths should be stored in a sanitize solution (Not in compliance; repeat violation.) Ice scoop should be stored handle up. To prevent contamination (Not in compliance; repeat violation; corrected on site during inspection.) Observation: Need chlorine test strips to ensure proper sanitizing solution concentration. Observation: Need to clean non-food contact surfaces — counter, racks (Not in compliance; repeat violation.) Observation: Garbage can lids receptacles containing when not in continuous use (Not in compliance; repeat violation.) Observation: Floors need to be cleaned (Not in compliance; repeat violation.)


• Sonic Drive in-White Hall, 8601 Dollarway Road, White Hall. Date of inspection June 22. Observed employee touching lettuce with bare hands. Gloves should be used when handling ready to eat foods. Employee washed hands and put on gloves during inspection (Not in compliance; corrected on site during inspection.) Observed containers of food in refrigerators and freezers being stored uncovered. Food should be covered when being stored to prevent contamination. Lids were placed on containers of food during inspection (Not in compliance; repeat violation; corrected on site during inspection.) Unidentified containers of seasoning observed being stored next to three compartment sink. Seasonings should be labeled with common name of food it contains. Containers were labeled during inspection (Not in compliance; repeat violation; corrected on site during inspection.) Front fountainette refrigerator is leaking condensation and needs to be repaired (Not in compliance; repeat violation.) Standing water observed in bottom of front fountainette refrigerator. Standing water should be cleaned out of refrigerator (Not in compliance; repeat violation.) Trash cans containing food residue should be covered when not in continuous use (Not in compliance; repeat violation.) Floor in walk in freezer under shelves is unclean and needs to be cleaned (Not in compliance; repeat violation.)


• Foodwise, 3101 W. 28th Ave. Date of inspection June 23. Paper towels not observed at hand washing sink in women’s restroom. Paper towels needed at all hand washing sinks (Not in compliance.) Observed wiping cloth in meat department being stored improperly. Wiping cloths should be stored in a sanitizer solution between use (Not in compliance; repeat violation.) Hand washing sink pipe in produce department is leaking water and needs to be repaired (Not in compliance; repeat violation.) Cheese cooler leaking condensation and needs to be repaired (Not in compliance; repeat violation.) Frozen food and ice cream walk in freezer floors have excessive ice on them and need to be defrosted and cleaned (Not in compliance; repeat violation.)


• Sandy Acre grocery, 9225 U.S. 270, White Hall. Date of follow-up inspection June 23. Unidentified bulk containers of seasonings observed throughout kitchen. Seasonings out of their original package and in bulk containers should be labeled with common name of food it contains (Not in compliance; repeat violation.) Observed unclean wiping cloths being stored on counter tops. Wiping cloths should be kept in a sanitizer solution between use (Not in compliance; repeat violation.) Trash cans containing food residue should be covered when not in continuous use (Not in compliance; repeat violation.) Some floor tiles in kitchen are cracked and need to be replaced (Not in compliance; repeat violation.) Ceiling in kitchen is unclean and needs to be cleaned (Not in compliance; repeat violation.)
