The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.


The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• Shipley’s Donuts, 5916 Dollarway Road. Date of inspection July 18. Provide an adequate supply of hand cleanser (liquid, powder or bar) at each hand-washing sink (Not in compliance; corrected on site during inspection.) Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each handwashing sink in food preparation, toilet and ware-washing areas (Not in compliance; corrected on site during inspection.) Wiping cloths shall be used as intended and in compliance with regulations pertaining to Retail food establishment. Wiping cloths should be placed in a sanitize solution after each use (Not in compliance; repeat violation.)


• The Hook, 7203 Sheridan Road, Suite A, White Hall. Date of construction inspection July 18. Restroom doors do not have a self closure. Restroom door should be provided with a tight-fitting and self-closing door (Not in compliance; repeat violation.)


• Subway, 3705 Camden Road. Date of inspection July 18. Discontinue consuming food, use of unapproved beverage containers, or use of tobacco in food preparation or ware-washing area (Not in compliance; corrected on site during inspection.) A hand-washing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing (Not in compliance; repeat violation; corrected on site during inspection.) Observation: A valid permit must be posted in view of the public (Not in compliance; repeat violation.)


• La Estrellita Tienda Mexicana, 28th Ave. (Rodrigo Cano.) Date of inspection July 19. Food packaged in retail food establishment, shall be labeled as specified in law. Food must be labeled with store name, address, and phone number (Not in compliance; repeat violation.)


• Shell Quick Mart GGHA LLC, 7001 Sheridan Road. Date of construction inspection July 20. Wiping cloths observed sitting out on counter tops. Wiping cloths should be kept in a sanitizer solution between use (Not in compliance; repeat violation; corrected on site during inspection.)


• Snack-N-Shop, 10900 U.S. 270. Date of inspection July 25. Some hot holding temperatures in warmer box are out of safe temperature range (must be 135 degrees F or above). Food out of temperature was placed on a 4 hour hold time using time as a public health control (Not in compliance; corrected on site during inspection.) Dates should be put on opened deli meats held for more than 24 hours. Deli meats were date marked during inspection (Not in compliance; corrected on site during inspection.) Observed used wiping cloths sitting on counter tops. Wiping cloths should be kept in a sanitizer solution between use (Not in compliance; repeat violation.) Single service cups for self service coffee observed being stored without protective packaging or other means that prevents contamination until used (Not in compliance; repeat violation.) Need test strips to test sanitizer strength (no test strips observed during inspection) (Not in compliance; repeat violation.)


• DJ’s One Stop Inc., 8885 U.S. 79 South. Date of inspection July 24. There are some missing floor tiles that need to be repaired/replaced (Not in compliance; repeat violation.)


• Strachota Senior Citizen Center, 801 E. Eighth Ave. Date of inspection July 21. Wiping cloth observed laid out on counter top near hand washing sink with tea maker on it. Wiping cloths should not be used on counter tops that are exposed to splash, spillage, or other food soiling (Not in compliance; repeat violation; corrected on site during inspection.)


• Handy Mart, 6605 U.S. 79 South. Date of inspection July 24. Observation: Need chlorine test strips to ensure proper sanitizing solution concentration (Not in compliance; repeat violation.) Observation: Needs to clean counter tops n the drink area (Not in compliance; repeat violation.) Observation: A valid permit must be posted in view of the public (Not in compliance; repeat violation.)


• Dollar General Store, 4119 Camden Road. Date of inspection July 26. No violations observed during time of inspection.
