The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• El Parian Mexican Restaurant, 8420 Dollarway Road, White Hall. Date of inspection Dec. 18. Observed some food in reach in freezer and walk in cooler being stored uncovered. Food should be stored covered to prevent contamination. Food was covered during inspection. Observed raw chicken and beef being stored above peppers in walk in cooler. Raw meat should be stored below vegetables. Raw meat was moved to bottom shelf of the walk in cooler during inspection. Consumer advisory needed in menu for raw or under cooked food.


• Kitchen Kung Fu, 8500 Dollarway Road, White Hall. Date of inspection Dec. 18. Some cold holding temperatures on buffet bar are out of safe temperature range (must be 41 degrees F or below). Some hot holding temperatures on hot bar are out of safe temperature range (must be 135 degrees F or above). Observed employees touching and chopping vegetables with bare hands. Gloves should be used when handling ready to eat foods. Some hot holding temperatures on hot bar are out of safe temperature range (must be 135 degrees F or above). Some cold holding temperatures on buffet bar are out of safe temperature range (must be 41 degrees F or below). Observed food in walk in cooler and refrigerators in kitchen being stored uncovered and spring rolls being stored directly in deep freezer with no container or cover. Food should stay covered when being stored to prevent contamination.


• Sonic Drive In - White Hall, 8601 Dollarway Road, White Hall. Date of inspection Dec. 18. Observed containers of food in refrigerator and freezer being stored uncovered. Food should be covered when being stored to prevent contamination. Lids were placed on containers of food during inspection.


• Earnesto’s, 218 S. Blake St. Date of inspection Dec. 14. Food prepared on site observed in kitchen held for more than 7 days. Food prepared on site and held for more than 24 hours should be date marked and held for no more than 7 days. Food was discarded during inspection. Popcorn machine is unclean and needs to be properly cleaned before next use.


• Cranford’s White Hall - deli, 8503 Dollarway, White Hall. Date of inspection Dec. 13. Pizza sitting out in container on counter is out of safe temperature range (must be 135 degrees F or above). Pizza was discarded during inspection.


• Cranford’s White Hall - store, 8503 Dollarway, White Hall. Date of inspection Dec. 13. Raw beef observed being stored above ready to eat food in walk in cooler. Raw meat should be stored below ready to eat foods. Raw meat was placed on the bottom shelf during inspection.


• Lybrand’s Bakery, 2900 Hazel St. Date of inspection Dec. 13. Time not kept properly on breakfast foods in warmer. Time was placed on breakfast items in warmer to be discarded after 4 hours if not used.
