The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• Sobriety Living Center, 2001 W. Fifth Ave. Date of inspection May 24. No violations observed pertaining to complaint during inspection.


• Dr. Johns Bar-B-Que, 507 E. Harding Ave. Date of follow-up inspection May 23. All violations corrected at time of follow-up inspection.


• Thomas Groceries & Gifts, 202 E. Front St., Altheimer. Date of inspection May 21. Observation: All trash cans need lids. Only need lids if they contain food residue and are not in continuous use.


• White Hall High School baseball concession stand, 700 Bulldog Drive, White Hall. Date of inspection May 21. No test strips observed in establishment. Test strips needed to test sanitizer strength. Establishment was not in operation during time of inspection.


• White Hall High School basketball concession stand, 700 Bulldog Drive, White Hall. Date of inspection May 21. No thermometer observed in refrigerator. Thermometer needed in all refrigerators holding food that must stay cold. No test strips observed in concession stand kitchen. Need test strips to test sanitizer strength. Establishment was not in operation during time of inspection.


• White Hall High School football concession stand, 700 Bulldog Drive, White Hall. Date of inspection May 21. Several dead insects noted on ground in visitor concession kitchen. Dead insects should be removed from kitchen. No test strips observed in concession stand kitchen on home or visitor side. Test strips needed to test sanitizer strength. Establishment was not in operation during time of inspection.


• White Hall Middle School, 8106 Dollarway Road. Date of inspection May 21. Observed sliced turkey in a bag with a date that exceeds 7 days. Food prepared on site or opened commercial containers held for more than 24 hours should be date marked and discarded after 7 days. Sliced turkey was discarded during inspection. Observed a container of nacho cheese sauce being thawed in sink of water. Food should only be thawed using an approved method.


• White Hall Middle School concession stand, 8106 Dollarway Road. Date of inspection May 21. No test strips noted in concession stand kitchen. Test strips are needed to test the sanitizer strength. Establishment was not in operation during time of inspection.


• Moody Elementary School, 700 Moody Drive, White Hall. Date of inspection May 18. Walk in freezer door is not sealing properly- needs to be repaired. Observed condensation on wall next to light switch.


• White Hall High School, 700 Bulldog Drive, White Hall. Date of inspection May 18. Observed chemical bottle of unknown substance being stored in kitchen. Bottles of chemical that are poured into bulk containers should be labeled with the common name of the substance it contains. Bottle was labeled with chemical name during inspection. Observed seasonings in dry storage room in unlabeled plastic bags. Food out of its original container and poured into bulk containers should be properly labeled with the food it contains. Seasonings were labeled during inspection.


• Thunder Lanes, 1600 E. Harding Ave. Date of inspection May 17. Some parts of ceiling in dry storage are unclean and need to be cleaned.


• Bad Bob’s, 2204 E. Harding Ave. Date of inspection May 15. Establishment not in operation. Before opening make to contact health department for a routine inspection.


• Huddle House - White Hall, 7735 Sheridian Road, 103 Woodberry Court, White Hall. Date of inspection May 15. Out of compliance due to several critical violations noted in report. Observed employee multi-tasking in gloves without washing hands and changing gloves. Gloves should be changed and hands washed between changing tasks. Observed food being stored uncovered in refrigerators. Food should be covered to prevent contamination while being stored. Inside of microwave and waffle maker are unclean and need to be cleaned. Cold holding temperatures in reach in refrigerator by drink station and nearest the juice dispenser are out of safe temperature range (must be 41 degrees F or below). Advised person in charge to discard product in the refrigerator. Food was discarded during inspection. Observed chemical bottle not labeled with common name of the chemical it contains. Chemicals should be labeled with the name of the chemical it contains. Observed several chemical bottles being stored near and above pans and above single service items. Chemical bottles should be stored separate. Observed flies throughout establishment. Establishment should remain free of pests. Seal on the bottom of the back door needs replaced. Observed used wiping cloths being stored on hand washing sink and near clean dishes. Wiping cloths should be kept in a sanitizer solution between use. Clean plates and bowls observed being stored face up and uncovered. Clean dishes should be stored covered or inverted to prevent contamination. Prep cooler near soda machine is leaking condensation and needs to be repaired. Three compartment sink pipes are leaking water and need to be repaired. Green cutting board near hot holding unit needs to be resurfaced or replaced. No toilet tissue available in men’s restroom. Toilet tissue should be available in restrooms. Trash cans containing food residue should be covered when not in continuous use. Some flooring is damaged and needs to be repaired. Some ceiling tiles in kitchen are damaged and need to be replaced. Floors throughout establishment are unclean and need to be cleaned. Ceiling vents are unclean and need to be cleaned. Observed light shield out in ware washing room. Need light shields on fixtures in kitchen. Inspector was denied access to the walk in cooler, walk in freezer, and dry storage area. The door was locked during inspection and employees did not have a key to get in.


• Kibb’s BBQ 2, 1400 S. Blake St. Date of inspection May 15. Observed no hand washing sign at hand washing sink. Must have a sign or poster that notifies food workers to wash their hands at all hand washing sinks used by food workers and shall be clearly visible to food workers. Observed sugar being stored on floor. Food is being stored on floor. Should be stored at least six inches above floor. Observation: Observed no test strips at washing sink. Need chlorine test strips to ensure proper sanitizing solution concentration.


• Blake Street Fish Market, 1130 S. Blake St. Date of inspection May 23. Some fish out of safe temperature range. Cold holding temperatures must stay 41 degrees F or below. Front door does not seal properly. All outer openings of a food establishment should be protected against the entry of insects and rodents. Observed several flies throughout establishment. Establishment should remain free of pests. Cutting boards should be resurfaced or replaced. Outside of fryer equipment and shelving throughout kitchen are unclean and need to be cleaned. Observed trash cans containing food residue uncovered. Trash cans in kitchen area containing food residue need to be covered when not in continuous use. Floors, walls, and ceilings throughout kitchen are unclean and need to be cleaned. Floors throughout kitchen, walls, especially near front door, and ceiling throughout kitchen, especially by back door, are damaged and need to be repaired. Vent hood is unclean and needs to be cleaned.


• Motor Way Grocery, 3432 U.S.65 South. Date of inspection May 22. Observed employee touching ready to eat foods during inspection. Gloves should be used when handling ready to eat foods. Employee put gloves on during inspection. Some cold holding temperatures in prep cooler were out of safe temperature range (must be 41 degrees F or below). Observed unidentified bottle of chemical being stored on three compartment sink. Chemicals out of their original container and in bulk bottles should be labeled with their common name. Observed several flies throughout establishment. Establishment should be maintained free of insects. Bag of onions observed being stored directly on the floor. Food should be stored at least 6 inches off of the ground. Food workers not wearing hair restraints while preparing food. Hair restraints must be worn by food workers. Observed used wiping cloths being stored on counter tops. Wiping cloths should be kept in a sanitizer solution between use. Single service cups at self service drink station observed being stored out of their original package and exposed to contamination. Single service items should be kept in their original packaging or by other means to protect them from contamination until being used. Test strips not observed in establishment. Test strips needed to test sanitizer strength. Observed trash cans containing food residue in kitchen uncovered. Trash cans containing food residue should be covered when not in continuous use. Observed lights in establishment over food without shields. Lights in kitchen are should be properly shielded. Health permit posted has expired. Current health permit not posted.


• ADC-Pine Bluff Work Complex, 890 Freeline Drive. Date of inspection May 21. Observed light with no protective covering. Lights must have protective covering to protect food and equipment. Observed expired permit. A valid permit be posted in view of the public.


• Pine Bluff Convention Center, #1 Convention Center Plaza. Date of inspection May 15. Plates and bowls in storage observed being stored face up and uncovered. Plates and bowls should be stored face down or by another manner to prevent them from being contaminated.


• Trinity Annex, 2900 W. Sixth Ave. Date of inspection May 15. Observed table needs to be cleaned. Observed an expired permit. A valid permit must be posted in view of the public.
