The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• Cita Bee’s Learning Academy, 4000 Old Warren Road. Date of follow-up inspection Dec. 4. Observed no thermometers in cooler. Temperature measuring device must be calibrated and accurate within the 1 degree if in Celsius and Fahrenheit or 3 degrees if only in Fahrenheit.


• Mammouth Orange, 1315 Donna Drive, Redfield. Date of follow-up inspection Dec. 3. All critical violations were corrected during time of inspection.


• Shop Wise, P.O. Box 334, Redfield. Date of inspection Dec. 3. Observed some missing floor tiles that need to be repaired or replaced. The physical facilities shall be maintained in good repair.


• CB Market, P.O. Box 121, Wabbaseka. Date of inspection Nov. 30. Observation: The restroom doors do not have self-closures on them. The restroom shall be completely enclosed and provided with a tight-fitting and self-closing door.


• Huddle House - White Hall, 7735 Sheridan Road, White Hall. Date of inspection Nov. 28. Observed employees multi-tasking without washing hands. Wash hands any time contamination could have occurred, when changing tasks, and as described in the Arkansas Rules and Regulations Pertaining To Food Establishments section 2-301.14 A-O. Observed no paper towels at hand-washing sink. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each hand-washing sink in food preparation, toilet, and ware washing areas. Observed no soap at hand-washing sink. Provide an adequate supply of hand cleanser (liquid, powder, or bar) at each hand-washing sink. Some food in stand up, reach in cooler by drink area, prep cooler under microwave, and walk in cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed food workers not wearing hair restraints. Food workers shall wear hair restraints, beard restraints, and clothing that covers body hair. Observed ice scoop being stored in ice with handle laying on the ice. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in accordance with established regulations. Observed a leak in the pipe of the three compartment sink. Pipe should be repaired so that it does not leak. No test strips observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions. Inside of prep cooler under waffle maker is unclean and needs to be cleaned. Hot water not working in front hand washing sink, three compartment sink, and men’s restroom hand washing sink. Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the retail food establishment.


• Huddle House - White Hall, 7735 Sheridan Road, White Hall. Date of follow-up inspection Nov. 30. Observed ice scoop being stored in ice with handle laying on the ice. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in accordance with established regulations. Ice scoop was placed handle up in the ice during inspection. Observed a leak in the pipe of the three compartment sink. Pipe should be repaired so that it does not leak.


• Motor Way Grocery, 3432 U.S. 65 South. Date of follow-up inspection Nov. 26. Some cold holding temperatures in walk in cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Single service cups at self service drink station observed being stored out of their original package and exposed to contamination. Single service items should be kept in their original packaging or by other means to protect them from contamination until being used. No hot water available at hand washing sink in restroom. Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the retail food establishment. Current health permit is not posted. It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501-661-2171 to ensure that you are in compliance with the law.


• Motor Way Grocery, 3432 U.S. 65 South. Date of follow-up inspection Nov. 30. Single service cups at self-service drink station observed being stored out of their original package and exposed to contamination. Single service items should be kept in their original packaging or by other means to protect them from contamination until being used. No hot water available at hand washing sink in restroom. Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the retail food establishment. Current health permit is not posted. It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501-661-2171 to ensure that you are in compliance with the law.


• Red Lobster, 3000 Pines Mall Drive. Date of inspection Nov. 30. Some temperatures in walk in cooler and quarter back reach in are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Some seasonings in dry storage are not labeled with their common name. Seasonings should be labeled with their common name.


• Margie’s House, 5830 U.S. 65 S. Date of inspection Nov. 29. Restroom door in kitchen area not self closing. Install a self closing device on this door.


• Rick’s Quick Stop, 6000 W. Barraque St. Date of inspection Nov. 29. Raw meats observed in refrigerator being stored above ready to eat foods. Raw meat should be stored below ready to eat foods. Raw meat was moved during inspection. Observed hole in ceiling above deep freezers. Hole should be repaired.


• E B Snow Cone, mobile, 400 W Barraque St. Date of inspection Nov. 28. Observed no temperature in cooler. Temperature measuring device must be calibrated and accurate within the 1 degree if in celsius and fahrenheit or 3 degrees if only in fahrenheit. Observed outside smoker not screened in. All outer openings of a food establishment should be protected against the entry of insects. Observation: Establishment does not have any testing strips to measure the concentration of the sanitizing solution. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions.


• Leon’s Catfish, #18 Chapel Village. Date of inspection Nov. 28. Observed flour, and cole slaw out of the original container. Food not in the original packages for use in establishment must be identified with the common name. Observed cabbage stored directly on the floor. Food shall be stored at least six inches above the floor to be compliance with established regulations. Establishment needs testing strips to measure the concentration of the sanitizing. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. Observation: Vent hood needs to be cleaned. Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination by dust, dirt, and other materials.
