The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• CASA Women’s Shelter, 1113 State St. Date of inspection Jan. 24. Observed raw chicken being stored above ready to eat foods in the reach in refrigerator next to dry storage. Raw meat should be stored below ready to eat foods. Raw chicken was moved to the bottom shelf during inspection. Some foods in refrigerator near kitchen door are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.


• Dollar Tree, 2709 E. Harding Ave. Date of follow-up inspection Jan. 24. Ceiling in back hallway is unclean and needs to be cleaned. Ceiling was cleaned during inspection.


• Meme’s Little Angels #2, 2101 W. 17th Ave. Date of opening inspection Jan. 24. This establishment is okay to operate.


• Sahara Shrine Center, 820 S. Main St. Date of inspection Jan. 22. Three compartment sink not draining water properly — needs to be repaired. Observed some liquid waste on the floor under cabinets beside the stove. Condensate drainage and other non-sewage liquids and rainwater shall be drained from point of discharge to disposal according to law. Some flooring throughout kitchen is unclean and needs to be cleaned.


• Sahara Shrine Center, 820 S. Main St. Date of follow-up inspection Jan. 24. Three compartment sink not draining water properly - -needs to be repaired. • Subway, 1620 A Main St. Date of follow-up inspection Jan. 24. Observed condensation leaking from ceiling vent in walk in cooler. Walk in cooler vent should be repaired so that it is free from leaks.


• Papa John’s Pizza, 3800 Camden Road, #310. Date of inspection Jan. 23. Observation: Observed pizza sauce on wall. The physical facilities shall be cleaned as often as necessary to keep them clean. Observation: Corrective Action: Place permit to operate in a location that is easily visible to customers. Contact the billing office at 501-661-2171 to request a reprint of your permit if necessary.


• Main Street Food Mart, 1620 Main St. Date of inspection Jan. 22. for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. No thermometer noted in refrigerator holding milk. Food temperature measuring device shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperature. Three compartment sink is visibly unclean and needs to be cleaned. Restroom door does not have a self closure. Restroom should be provided with a self-closing door. Some ceiling tiles in ware washing area are damaged or missing and need to be replaced. Some floors, especially under all equipment, are unclean and need to be cleaned. No lighting observed in room with ice machine. Lights needed in room with ice machine.
