The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• E-Z MART, 5401 Dollarway Road. Date of inspection April 18. Observed counter top unclean. All surfaces should be cleaned to prevent accumulation of soils.


• Granny’s Kitchen, 2901 Pines Mall Drive. Date of inspection April 18. Replace broken probe type thermometer for checking internal food temps. Uncovered food in walk in cooler. Cover food as soon as it reaches proper cooling temperatures. Observation: No sanitizer test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. Areas of building and some equipment visibly soiled. Clean as needed even if equipment and areas are not being used by your business. No lids on waste cans in preparation area. Keep lids on waste cans when not actively in use. Preparation and storage areas are in some disrepair. Repair damaged areas as to be durable, smooth, non absorbent and easily cleanable. Observation: USA FOOD Program shows business has expired license. Corrective Action: It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501- 661-2171 to ensure that you are in compliance with the law.


• Momma’s Diner, 3015 W. 28th Ave. Date of inspection April 18. Damaged ceiling tile in dry storage needs to be replaced.


• Shell Ross Co., 100 S. Ohio St. Date of inspection April 18. Observation: No sanitizer test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. Clean up packaging area before use.


• Taco Bell, 3501 Camden Road. Date of inspection April 18. Observation: Observed counter tops need to be cleaned. All equipment shall be cleaned at a frequency to prevent build-up of debris. Observation: Observed trash cans containing food residue being stored uncovered while not in continuous use. Trash cans containing food residue should be covered when not in continuous use.


• The Corner Store, 3800 U.S. 425 South. Date of inspection April 18. No information on store bagged ice. Put store address on store bagged ice. Observation: No sanitizer test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. Ceiling over pizza oven in disrepair. Finish remodeling work underway.


• Blake Street Fish Market, 1130 S. Blake St. Date of inspection April 17. Cutting boards should be resurfaced or replaced. Front three compartment sink is unclean and needs to be cleaned. Shelves in front of store are unclean and need to be cleaned. Outside of fryer equipment and refrigerator and shelving throughout kitchen are unclean and need to be cleaned. Observed trash cans containing food residue uncovered while not in continuous use. Trash cans in kitchen area containing food residue need to be covered when not in continuous use. Floors, walls, and ceilings throughout kitchen are unclean and need to be cleaned. Floors throughout kitchen, walls, especially near front door, and ceiling throughout kitchen are damaged and need to be repaired. Vent hood is unclean and needs to be cleaned.


• Jeewan Groceries LLC, 2317 W. 28th Ave. Date of inspection April 17. Chicken sandwich in cooler was out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Chicken sandwich was discarded during inspection. Observed ice scoop being stored directly on top of ice machine. Ice scoop should be stored in a way to prevent it from being contaminated between use. No test strips observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions. Drink station counter top is unclean and needs to be cleaned. Men’s restroom door is not self closing. A toilet room located on the PREMISES shall be completely enclosed and provided with a tight-fitting and self-closing door. Floors throughout facility, especially under shelves and three compartment sink, are unclean and need to be cleaned.


• Kibb’s Bar-B-Que, 2117 University Drive. Date of inspection April 17. Observed wiping cloths laying on the counter. Wiping cloths shall be kept in sanitizing solution after each use. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment. Observation: Restroom door does not have a self closure. Restroom should be provided with a self closing door.


• The Family Diner, 116 S. Highway 365, Redfield. Date of inspection April 17. Observation: Observed no test strips in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions. Observation: inside of the refrigerator had food stains. All non food contact surfaces shall be cleaned at frequency to prevent accumulation. Observation: Observed trash cans containing food residue being stored uncovered while not in continuous use. Trash cans containing food residue shall stay covered while not in continuous use.


• Camelot Food Mart Inc., 4012 Old Warren Road. Date of opening inspection April 15. Service sink is not installed in establishment. Service sink should be installed properly. Okay to operate-permit given.
