The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• Days Inn, 406 N. Blake St. Date of inspection July 18. Existing 2 compartment sink in use. Food code requires a 3 compartment sink for washing, rinsing and sanitizing.


• El Sol Mexican Restaurant, 3801 Camden Road, Suite 9. Date of inspection July 17. Observation: All employee drinks in the food preparation. area must have a lid and straw. Discontinue consuming food, use of unapproved beverage containers, or use of tobacco in food preparation or ware-washing area. Drink was discarded during time of inspection. Chicken was being stored above ready to eat foods. All raw meat chicken, and beef shall be stored below all ready to eat foods. Chicken was moved to different location.


• Open Arms Learning Center and Childcare, 105 S. Arkansas 365, Redfield. Date of inspection July 16. Employee was making a sandwich with bare hands. No bare hand contact with exposed, ready-to-eat food or ice. Use gloves, spatulas, tongs, deli tissue or other dispensing equipment. Employee put on gloves during time of inspection.


• Camelot Food Mart Inc., 4012 Old Warren Road. Date of inspection July 15. Must have a sign or poster that notifies food workers to wash their hands at all hand-washing sinks used by food workers and shall be clearly visible to food workers. Post provided sign.


• Subway, 3705 Camden Road. Date of inspection July 19. Observation: Two refrigeration units are not working. Establishment moved all potentially hazards food from both units to a refrigeration that is maintaining the correct temperature. [List food item(s), temperature, and unit] Corrective Action: Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.


• Subway, 3705 Camden Road. Date of follow-up inspection July 22. All critical violations were corrected during time of follow- up inspection.


• Papa John’s Pizza, 3800 Camden Road, #310. Date of inspection July 19. Wiping cloths were observed sitting on the hand washing sink. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment.


• Pine Bluff Best Gas Station, 200 University Drive. Date of inspection July 15. Ice for sale is not labeled. Food for sale shall be labeled as specified in law.


• Quality Inn and Suites, 2809 Pines Mall Drive. Drive. Date of inspection July 15. Must have a sign or poster that notifies food workers to wash their hands at all hand-washing sinks used by food workers and shall be clearly visible to food workers. Post provided sign. Observation:No sanitizer test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions.


• Super 8, 3008 Market St. Date of inspection July 15. Observation: No sanitizer test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions.


• Moma Keta’s Childcare & Developmental Center, 2300 W. 31st Ave. Date of inspection July 11. Observed refrigerator not holding proper temperature. All cold hold storage shall maintain 41F or below. Establishment moved all potentially hazards food from refrigerator to a cooler that is maintaining the correct temperature.


• Arkansas Department of Correction Max (Tucker) Unit, 2501 State Farm Road, Tucker. Date of inspection July 10. Aluminum food strainers are in disrepair and prone to metal flaking off into food products. Discard them. Ceiling condensation in walk in cooler dripping water on to storage racks. Repair this issue. Vent hood system over kettles not working properly. Repair so vent system pulls out cooking steam.


• Arkansas Department of Correction, Tucker, 2400 State Farm Road, Tucker. Date of inspection July 10. Sweep at bottom of loading dock doors is missing. All outer openings of a food establishment should be protected against the entry of insects and rodents. Flat grills are not cooking food evenly according to management. Hot and cool spots. Repair or replace.


• Chicken House #2, 2510 E. Harding Ave. Date of inspection July 12. Observation: Ceiling tiles are soiled throughout the establishment and need to be replaced. The establishment shall be in good repair.Observation: Permit posted shows it expired. Permit needs renewed and the current permit needs to be posted.


• Daylight Donuts, 2320 S. Blake St. Date of inspection July 10. Wiping cloths were observed sitting on the counters in the kitchen. Wiping cloths shall be used as intended and in compliance with regulations pertaining to retail food establishment.


• La Estrellita Tienda Mexicana, 28th Ave., Rodrigo Cano. Date of inspection July 10. Observed red peppers stored directly on the floor. Food shall be stored at least 6 inches above the floor and in compliance with established regulations.


• Seark@Seabrook, concession, 6808 Hazel St. Date of inspection July 10. Concession not in operation during time of inspection. No test strips observed in concession. Test strips must be available and used to test the strength of chemical sanitizing solutions. Three compartment sink not noted in establishment. A sink with at least 3 compartments shall be provided for manually washing, rinsing, and sanitizing equipment and utensils.


• Seark@Seabrook, concession #2, 6808 Hazel St. Date of inspection July 10. Concession not in operation during time of inspection. Hot water needed in concession before opening next. No test strips observed in concession. Test strips must be available and used to test the strength of chemical sanitizing solutions. Drawers and cabinets in concession are unclean and need to be cleaned. No hot water observed in concession during inspection. Hot water needed in concession before opening next. O foot candles of light observed in dry food storage area. At least 10 foot candles of light needed in dry food storage areas.


• Seark@Seabrook, concession #3, 6808 Hazel St. Date of inspection July 10. Concession not open during time of inspection. No paper towels provided at hand washing sink. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each hand-washing sink in food preparation, toilet and ware-washing areas. No soap provided at hand washing sink. Provide an adequate supply of hand cleanser (liquid, powder or bar) at each hand washing sink. No test strips observed in concession. Test strips must be available and used to test the strength of chemical sanitizing solutions. Observed trash can in concession with food residue being stored uncovered. Trash cans containing food residue should be covered when not in continuous use.


• DJ’s One Stop Inc., 8885 U.S. 79 South. Date of inspection July 22. Observed some single service items stored on the floor. Items must be stored at least 6 inches above the floor to prevent contamination.


• Riverside Wing Thing (Wip Development LLC), 2010 Port Road. Date of inspection July 22. Observation: Observed insects during time of inspection. Maintain the premises free of insects, and other pests. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES by (A) Routinely inspecting incoming shipments of FOOD and supplies; (B) Routinely inspecting the PREMISES for evidence of pests; (C) Using methods, if pests are found, such as trapping devices or other means of pest control and (D) Eliminating harborage conditions.


• Tasty Treats, mobile, 2911 W. 13th Ave. Date of inspection July 22. Hand washing sink was blocked by a container.A hand washing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than hand washing. Container was removed during time of inspection.
