The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• Chef Lee, 502 Mallard Loop. Date of follow-up inspection Sept. 16. Item #8 was corrected during the Routine assessment but after inspector submitted assessment on USA Food Program. Item # 8: Adequate hand-washing facilities supplied & accessible.


• Sobriety Living Center, 2001 W. Fifth Ave. Date of inspection Sept. 4. Must have a sign or poster that notifies food workers to wash their hands at all hand-washing sinks used by food workers and shall be clearly visible to food workers. Post provided sign at hand sink. Soup and salsa in one cooler at 43 degrees. Cooler was turned down to lowest setting during assessment.


• Sobriety Living Center, 2001 W. Fifth Ave. Date of follow-up inspection Sept. 16. This Follow up assessment regards item #20 only: Proper cold holding temperatures — in compliance.


• A and S Quick Mart, 1416 S. Blake St. Date of inspection Sept. 12. No paper towels observed at hand-washing sink. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each hand-washing sink in food preparation, toilet and ware-washing areas. Hand-washing sink is blocked by boxes. A hand-washing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than hand-washing. Ice machine shield is unclean and needs to be cleaned. Milk (43 degrees F) and apple juice (45 degrees F) in walk in cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed unlabeled container sitting on counter where coffee is stored. Food not in the original packages for use in establishment must be identified with the common name of the food. Observed ice bags packaged in establishment not labeled. Ice packed in establishment should be labeled with store information. Observed a pipe leaking in dry storage area. Pipe should be repaired so that it does not leak. No test strips observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions. Two compartment sink noted in establishment. Three compartment sink needed to properly wash, rinse, and sanitize dishes. Counter tops where coffee is stored is unclean and needs to be cleaned. Observed standing water on the floor in the dry storage room. Standing water should be cleaned from floor. Restroom door is not self closing. A toilet room located on the PREMISES shall be completely enclosed and provided with a tight-fitting and self-closing door. Observed several damaged ceiling tiles throughout establishment. Ceiling tiles should be replaced. Floors in establishment, especially under shelves, are unclean and need to be cleaned.


• Kosmic Kidz Learning Center LLC, 1702 W. Sixth Ave. Date of inspection Sept. 11. Mustard (51 degrees F) and milk (51 degrees F) in double door refrigerator are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.


• Kosmic Kidz Learning Center LLC, 1702 W. Sixth Ave. Date of follow-up inspection Sept. 16. Refrigerator that was out of temperature is not being used. Sign posted on refrigerator that it is out of order.


• KWIK Chek, 800 N. Bryant St. Date of follow-up inspection Sept. 12. All critical violations were corrected during time of inspection.


• Laugh-n-Learn Childcare Center, 3102 W. 34th Ave. Date of inspection Sept. 12. Observation: Refrigerator temperature was 48 degrees. [List food item(s), temperature, and unit] Corrective Action: Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Milk was discarded during time of inspection. Inspector will return for a follow-up inspection. Observation: Bathroom door needs a string closure. A toilet room located on the premises shall be completely enclosed and provided with a tight-fitting and self-closing door.


• Mi Casita Tex Mex Restaurant, 1005 Sheridan Road/P.O. Box 122, Redfield. Date of inspection of complaint Sept. 12. No violations observed during time of inspection.


• Regional Park Softball, 1100 Regional Park Drive. Date of inspection Sept. 12. No test strips observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions. Cabinet under three compartment sink is unclean and needs to be cleaned.


• HR Food Mart, 201 Edline, Altheimer. Date of inspection Sept. 11. Observed hand-washing sink blocked in the kitchen. A hand-washing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than hand washing. Boxes were removed during time of inspection. Observation: Observed chicken not under cold running water. Corrective Action: Time/Temperature Control for Safety (TCS) Food shall be thawed (A) Under refrigeration that maintains the FOOD temperature at 41°F or less, (B) Completely submerged under running water 70°F or less with enough velocity to float off loose particles down the drain and maintains the food above 41°F, or (C) as part of the cooking process. Chicken was placed under cold running water. Observation: Observed unclean walls and floors in the kitchen area. Walls and floors shall be clean in the kitchen area. Observation: Current permit has expired. Corrective Action: It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501-661-2171 to ensure that you are in compliance with the law.


• Pine Bluff Schools Food Warehouse, 105 S. Walnut St. Date of inspection Sept. 11. Some parts of the ceiling in the dry storage room is damaged and needs to be repaired.


• R B of Little Rock Inc., dba Town & Country, 5000 Middle Warren Road. Observation: Facility does not have chemical sanitizer test strips. Test strips must be available and used to test the strength of chemical sanitizing solutions. Observation: Inside of freezer needs to be cleaned. Freezer shall be cleaned to sight and touch.
