The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• Dollarway High School, 2601 Fluker St. Date of inspection Oct. 14. Observation: Observed floor tiles missing in establishment. Clean the physical facilities as often as necessary to keep them clean.


• Wonder and Cedric Bennett, mobile, 1600 S. Missouri St. Date of inspection Oct. 14. Observation: Observed kitchen equipment has an accumulation of dust. Kitchen equipment shall be cleaned at a frequency necessary to preclude any accumulation of dust and other residues.


• Cita Bee’s Learning Academy, 4000 Old Warren Road. Date of inspection Oct. 10. Observation: Milk and cheese in refrigerator were observed at a temperature above 41 degrees. [List food item(s), temperature, and unit] Corrective Action: Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Milk and cheese was moved to another cooler.


• Coleman Intermediate School, 4600 W. 13th Ave. Date of inspection Oct. 10. Observed an opening in back door of the kitchen. All outer openings of a food establishment should be protected against the entry of insects and rodents.


• Pizza Hut/JBJ, 1050 L.A. Prexy Davis Drive, mail slot 4901 Dr. Date of inspection Oct. 10. Observation: Kitchen equipment has an accumulation of food residue. Prep area and surfaces are unclean. Kitchen equipment and prep area should be cleaned at a frequency necessary to preclude any accumulation of food residue and other residues. Observation: Observed missing floor tiles in storage area. The physical facilities shall be maintained in good repair.


• Shipley Donuts, 1300 S. Main St. Date of inspection Oct. 8. Butter (48 degrees F) in refrigerator across from the three compartment sink is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.


• Shipley Donuts, 1300 S. Main St. Date of follow-up inspection Oct. 9. Cheese (47 degrees F) in refrigerator across the three compartment sink is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.


• Shipley Donuts, 1300 S. Main St. Date of follow-up inspection Oct. 10. No violations reported.


• Subway, 5401 S. Olive St., Suite 400. Date of inspection Oct. 10. Observation: Observed a drink with out a lid and straw. (Specific observation here) Corrective Action: Discontinue consuming food, use of unapproved beverage containers, or use of tobacco in food preparation or ware washing area. Drink was discarded during time of inspection. Observation: Observed no paper towels at hand washing sink. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each hand-washing sink in food preparation, toilet and warewashing areas.


• Angelita Restaurant, 2901 Pines Mall Drive, Suite 704. Date of inspection Oct. 9. No food labels on bulk containers. Food not in the original packages for use in Establishment must be identified with the common name of the Food. Soda cans in drink cup ice bin. After being used as a medium for cooling the exterior surfaces of food, packaged foods or equipment, ice may not be used as food. Some food items in walk in cooler are not covered. Cover food items in cold storage after they reach 41 degrees or below. Cardboard on walk in floor and duct tape on chest freezer/work table. Materials in preparation areas are to be durable, smooth, non absorbent and easily cleanable. Observation: No sanitizer test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. Bulk containers visibly soiled. Clean bulk containers. Observation: Areas in establishment visibly soiled. Corrective Action: Clean the physical facilities as often as necessary to keep them clean. Observation: Physical facilities in disrepair Corrective Action: The PHYSICAL FACILITIES shall be maintained in good repair.
