The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• JENKINS MEMORIAL SCHOOL, 2410 Rike St. Date of follow-up inspection Dec. 20. Previous violations corrected.


• DOLLAR GENERAL STORE, 14019 Dollarway Road, White Hall. Date of inspection Nov. 21. Milk (46 degrees F) and yogurt (47 degrees F) in reach in refrigerator are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Facility lacks refrigerator thermometers. Food temperature measuring device shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperature.


• DOLLAR GENERAL STORE, 14019 Dollarway Road, White Hall. Date of follow-up inspection Nov. 27. Yogurt (44 degrees F) and butter (45 degrees F) in reach refrigerator are out of safe temperature range. • DOLLAR GENERAL STORE, 14019 Dollarway Road, White Hall. Date of follow-up inspection Dec. 19. No violations reported.


• BIG RED TRAVEL PLAZA, 8110 Sheridan Road, White Hall. Date of inspection Dec. 9. Ice maker deflector shield is unclean and needs to be cleaned. Pickles and ham (51 degrees F) in prep cooler in the kitchen are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed gizzards sitting in one sink and chicken sitting in another sink being thawed in water. Time/Temperature Control for Safety (TCS) Food shall be thawed (A) Under refrigeration that maintains the FOOD temperature at 41°F or less, (B) Completely submerged under running water 70°F or less with enough velocity to float off loose particles down the drain and maintains the food above 41°F, or (C) as part of the cooking process. Observed insects in establishment. The premises shall be free of insects, rodents, and other pests and measures must be taken to to eliminate their presence. Observed bags of onions and containers of food being stored directly on the floor in the walk in cooler. Containers of food should be kept at least 6 inches off of the floor to prevent contamination. No test strips observed to test for sanitizer in automatic dishwasher. Test strips must be available and used to test the strength of chemical sanitizing solutions. Trash cans containing food residue were uncovered during inspection. Trash cans containing food residue should be covered when not in continuous use. Some parts of ceiling in the kitchen in front of the vent hood are unclean and need to be cleaned. Two light fixtures in kitchen lack proper protective shielding. Light fixtures in kitchen should be properly shielded.


• DELTA - ARAMARK, 1701 S. Spruce St. Date of inspection Dec. 9. Observation: Corrective Action: Walls are unclean and needs to be cleaned. The PHYSICAL FACILITIES shall be maintained in good repair. Observation: No current health permit posted. Corrective Action: It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501-661-2171 to ensure that you are in compliance with the law.


• HUDDLE HOUSE, 7735 Sheridan Road, White Hall. Date of inspection Dec. 9. Observed food in containers in the reach in refrigerator being stored uncovered. Food should be covered while being stored to prevent contamination. Food was covered during inspection. Cheese (48 degrees F) and macaroni and cheese (47 degrees F) in prep cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Cheese and macaroni and cheese were discarded during inspection. Observed boxes of single service containers being stored directly on the floor in the dry storage area. Single service containers must be stored in the original package and in a manner that prevents contamination. Observed trash cans containing food residue being stored uncovered while in continuous use. Trash cans containing food residue should be covered when not in continuous use. Floors throughout establishment, especially in back room under shelving and automatic dishwasher area, are unclean and need to be cleaned.


• TASTY-DONUTS, 8021 Dollarway Road, White Hall. Date of inspection Dec. 9. Observed raw beef being stored above jalapenos in reach in refrigerator. Raw meat should be stored below ready to eat food. Raw beef was placed on bottom shelf of reach in refrigerator during inspection. Observed bulk container of seasoning being stored unlabeled in dry storage. Food not in the original packages for use in establishment must be identified with the common name of the food. Bin was labeled during inspection. Observed single use containers being reused. Single use containers should not be reused. Restroom doors are not self-closing. A toilet room located on the premises shall be completely enclosed and provided with a tight-fitting and self-closing door.


• CATERING BY SCOTT RAY, 9231 Highway 270, White Hall. Date of inspection Dec. 6. Facility lacks refrigerator thermometer in chilled meals and heat and serve reach in refrigerators. Food temperature measuring device shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperature. Observed boxes of food in walk in freezer being stored on the ground. Food in boxes should be stored at least 6 inches off of the ground. Observed some single use containers in walk in cooler being reused to store food in. Single use containers should not be reused.


• SANDY ACRES GROCERY, 9225 Highway 270. White Hall. Date of inspection Dec. 6. Observed raw beef and raw fish above ready to eat food in reach in refrigerator. Raw meat should be stored below ready to eat food. Raw meat was placed on bottom shelf during inspection. Chicken tender (109 degrees F) and chicken (123 degrees F) are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept hot at a temperature of 135.0°F or above, as measured by an internal probe thermometer, to limit bacterial growth. Banana peppers (57 degrees F) and jalapenos (53 degrees F) in pizza cooler and ham (44 degrees F) in reach in refrigerator in the kitchen are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Some flooring in kitchen, especially under cooking equipment, is unclean and needs to be cleaned. Some flooring in kitchen is damaged and needs to be replaced.
