The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• TACO BELL, 8001 Sheridan Road, White Hall. Date of inspection into complaint Jan. 3. No violations pertaining to complaint during inspection.


• McDONALD’S, 3610 Camden Road. Date of inspection Dec. 20. Observation: Walls are unclean in ware washing area. Nonfood contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Observation: Observed trash can without lids. Expect as specified in Paragraph of this section, receptaccles and waste handling units for refuse, recyclables, and returnables and for use with materials containing food residue shall be durable, cleanable, insect and rodent resistant leakproof, and nonabsorbent.


• McDONALD’S, 107 S. Blake St. Date of inspection Dec. 19. Observation: Facility lacks test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions.


• RED LOBSTER, 3000 Pines Mall Drive. Date of inspection Dec. 16. Pico de gallo (43 degrees F) and jalapeno ranch (54 degrees F) are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Floors in kitchen under salad prep cooler and in walk in freezer are unclean and need to be cleaned.


• RED LOBSTER, 3000 Pines Mall Drive. Date of follow-up inspection Dec. 20. Floors in kitchen under salad prep cooler and in walk in freezer are unclean and need to be cleaned.


• CEDAR CABIN, 1703 University Drive. Date of inspection Dec. 19. Observation: Facility lacks test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions.


• LARRY’S PIZZA, 7401 Dollarway Road, White Hall. Date of inspection Dec. 19. Can opener blade is unclean and needs to be cleaned. Can opener blade was cleaned and sanitized during inspection. Observed diced tomatoes (49 degrees F) in prep area out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Diced tomatoes were discarded during inspection. Floors in kitchen, especially under cooking and prep equipment, is unclean and needs to be cleaned.


• OCEANS FISH & CHICKEN, 2213 E. Harding Ave. Date of inspection Dec. 19. Observed boxes of food stored on the floor in freezer. Food shall be stored at least six inches above the floor and in compliance with established regulations. Observed wiping cloths stored on the counters. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment. Observation: Observed refrigerate unclean and needs to cleaned. Equipment food contact surfaces and utensils shall be clean to sight and touch. Observation: Walls and ceilings are soiled in kitchen area. Nonfood contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Observation: Vent hood needs to be cleaned. Exhaust ventilation hood system if food preparation and ware washing areas including components such as hoods, fans guard and ducting shall be designed to prevent grease or condensation from draining or dripping onto food, equipment utensils, linens, and single service and single-use articles.


• SUPER 1 FOODS, 2721 Camden Road. Date of inspection Dec. 19. Observation: Observed food residue on the cooler wall. Nonfood- contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of food residues.


• SUPER 1 FOODS, deli, 2721 Camden Road. Date of inspection Dec. 19. Observation: Observed hand washing sink unclean. Hand washing shall be cleaned as often as necessary to keep them clean.


• TAQUERIA LA REGIOMONTANA, mobile, 970 English Road, Jefferson. Date of inspection Dec. 19. Facility lacks refrigerator thermometer. Food temperature measuring device shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperature. Observed a few small openings on floor of mobile truck around edges attached to the wall. All outer openings of a food establishment should be protected against the entry of insects and rodents. Observed a leak in the pipe from the tank to the water pump. Pipe should be repaired so that it does not leak. No water available at sinks in mobile unit. Water should be made available before opening next.
