The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• CITA BEE’S LEARNING ACADEMY, 4000 Old Warren Road. Date of inspection March 17. Observation: Facility lacks test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions.


• COMMUNITY EMPOWERMENT COUNCIL, 1711 S. Ohio St. Date of inspection March 17. Observed single use cup being used to scoop sugar out. Single use cup should not be reused to scoop ingredients out. Scoop used for sugar should have a handle and be cleanable. Single use cup was discarded during inspection.


• THE CORNER STORE, 3800 U.S 425 South. Date of inspection March 17. No address on ice bags. Store bagged ice should have store name and address on bags. Observation: Ice bagging room visibly soiled. Corrective Action: Clean the physical facilities as often as necessary to keep them clean.


• MCDONALD’S, 8012 Sheridan Road, White Hall. Date of inspection March 16. Bottom of cooler under orange juice machine is unclean and needs to be cleaned. Observed trash cans containing food residue that are being stored uncovered while not in continuous use. Trash cans containing food residue should be covered while not in continuous use. Floors in establishment, especially under and behind ice machine, soda machine by three compartment sink, and cooking equipment, are unclean and need to be cleaned.


• BIG CHIEF WINGS EXPRESS, 1106 W. 16th Ave. Date of inspection March 13. Observation: Not all items in cooler are holding at 41 degrees or below. [List food item(s), temperature, and unit] Corrective Action: Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observation: Observed fish not being thawed properly. Corrective Action: Time/Temperature Control for Safety (TCS) Food shall be thawed (A) Under refrigeration that maintains the FOOD temperature at 41°F or less, (B) Completely submerged under running water 70°F or less with enough velocity to float off loose particles down the drain and maintains the food above 41°F, or (C) as part of the cooking process. Fish was placed under cold running water during time of inspection. Observed sauce out of original containers are not labeled. Food not in the original packages for use in Establishment must be identified with the common name of the Food. Observed wiping cloths stored on the counters. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment. Observed wood being used as a surface on shelves. Shelves shall have a smooth, cleaned surface.


• THE SOUTHERN STANDARD KITCHEN, 1100 W. 46th Ave. Observed no testing strips available for the Chlorine sanitizer that is being used at the sanitation buckets and three compartment sink. Test strips must be available and used to test the strength of chemical sanitizing solutions. Person in charge is making arrangements to have testing strips for the Chlorine sanitizer purchased by the correct by date. Observed the water temperature at the hand-washing sink to be at 109 Degrees F. Observed the concentration of the Chlorine sanitizer at the sanitation bucket to be at 100 ppm at 103 Degrees F. The permissible concentration of the Chlorine sanitizer shall be between 50 ppm and 200 ppm.


• WENDY’S, 2909 W. 28th Ave. Date of inspection March 13. Sliced tomatoes (55 degrees F) and jalapenos (59 degrees F) in prep cooler up front are out of safe temperature. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Some floors in kitchen under meat cooler are unclean and need to be cleaned. Floor was cleaned during inspection. 3/13/2020 53 6-501.11 NC Some floor tiles in establishment are damaged and need to be replaced. The physical facilities shall be maintained in good repair. Light fixture above two compartment sink by walk in cooler does not have a protective shield. Light fixtures should be properly shielded.


• ADDI’S CORNER 2, 101 N. Blake St. Date of inspection March 12. Ice machine deflector shield is visibly unclean and needs to be cleaned. Ice machine deflector shield was cleaned during inspection. Thermometer to test internal temperatures not noted in establishment. Food temperature measuring device shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperature. Observed single use cups at self service drink station being stored out of package and not protected. Single use cups should be stored in original packaging or by other means that protects them from contamination until used. No test strips observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions. Ice machine door is unclean and needs to be cleaned. Some flooring in establishment, especially in dry storage room under drink dispensers, are unclean and need to be cleaned. Some floor and ceiling tiles are damaged and need to be replaced.


• GANDY ELEMANTARY SCHOOL, 400 Gandy Ave., White Hall. Date of inspection March 5. Milk (44 degrees F) and milk (46 degrees F) in milk box are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Seal under walk in freezer door is broken. Seal needs to be repaired.


• GANDY ELEMANTARY SCHOOL, 400 Gandy Ave., White Hall. Date of follow-up inspection March 12. Previous violations corrected during time of inspection.


• LAUGH-N-LEARN CHILDCARE CENTER, 3102 W. 34th Ave. Date of inspection March 12. Observation: Floor tile needs to be cleaned or replaced. Observation: No current health permit posted. Corrective Action: It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501-661-2171 to ensure that you are in compliance with the law.


• WATSON CHAPEL SOFTBALL CONCESSION, 4000 Camden Road. Date of inspection March 12. Observation: Counter tops are unclean and needs to be cleaned.


• ASIAN GROCERY, 8504 Dollarway Road. Date of inspection March 11. No paper towels provided at hand washing sink in restroom. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each hand washing sink in food preparation, toilet, and ware washing areas. Observed unlabeled containers of food in display cooler. Food should be properly labeled with information provided in 3-602.11 in the Rules and Regulations Pertaining to Food Establishments. Observed boxes of food being stored on the floor in the walk in freezer. Boxes of food should be stored at least 6 inches off of the floor. Three compartment sink is unclean and needs to be cleaned. Test strips not observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions. Restroom door is not self closing. Restroom door should have a self closure on it.


• Off The Grill, 1219 S Main St. Date of inspection March 11. Observed bottles of chemicals being stored next to food items in the kitchen. Chemicals should be stored separate from food items. Chemicals were moved to chemical storage shelving during inspection.


• PRECIOUS HEARTS STUDENT CENTER, 1611 Brentwood Drive. Date of inspection March 4. Observation: Observed food items at a temperature of 47 degrees. [List food item(s), temperature, and unit] Corrective Action: Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Food items was removed from cooler.


• PRECIOUS HEARTS STUDENT CENTER, 1611 Brentwood Drive. Date of follow-up inspections March 11. Critical violation #20 was corrected during time of inspection.


• BRIGHT START LEARNING & CHILD Address: 613 W. Eighth Ave. Date of inspection March 10. Observed wiping cloths laying on counter top. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment.


• HAZEL FINE DELI GROCERY, 2510 S. Hazel St. Date of inspection March 10. Observed hand washing sink blocked in the kitchen area. A hand washing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than hand washing. Food not in original containers are not labeled. Food not in the original packages for use in Establishment must be identified with the common name of the Food. NC Observed a box of single service items in storage area stored on the floor. Items must be stored at least six inches above the floor to prevent contamination. Observation: No test strips are available in establishment. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. Observation: Counter tops and shelves are unclean and needs to be cleaned. Nonfood contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Observation: Observed trash cans containing food residue. Trash cans containing food residue shall be stored covered when not in continuous use.
