The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:


• PINE BLUFF AQUATIC CENTER, 400 E. 11th Ave. Date of inspection into complaint May 20. No violations observed during time of inspection.


• DOLLARWAY HIGH SCHOOL, 2601 Fluker St. Date of inspection May 19. Observation: Air vent needs to be cleaned. Corrective Action: Clean the physical facilities as often as necessary to keep them clean.


• ROBERT R. MOOREHEAD SCHOOL, 2601 Fluker St. Date of inspection May 19. Observed paper cups stored on the floor. Items must be stored six inches above the floor to prevent contamination.


• TRANSFORMATION PROJECT, 1400 Centennial Lane (CENTENNIAL FELLOWSHIP CHURCH). Date of inspection May 19. Some flooring in establishment, especially under fryers and reach in refrigerator and freezer and near the meat slicer and microwave, are unclean. Clean the physical facilities as often as necessary to keep them clean.


• WOOD SHED mobile, 9621 U.S. 270. Date of inspection May 18. No test strips observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions.


• LIGHTHOUSE CHARTER SCHOOL, 708 W. Second Ave. Date of inspection May 15. No test strips observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions.


• WING SHACK III, 2701 E. Harding Ave. Date of opening inspection May 11. No soap at hand sink. Provide soap before opening. Must have a sign or poster that notifies food workers to wash their hands at all hand-washing sinks used by food workers and shall be clearly visible to food workers. Observation: No paper towels at hand sink. Corrective Action: Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated air drying device at each hand-washing sink in food preparation, toilet and ware-washing areas. Observation: No sanitizer test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. Vent hood system must comply to AR Department of Labor Regulations.


• COLONIAL FESTIVES LLC DBA “ARCTIC DELIGHT & MORE,” 3131 S. Olive St. Date of opening inspection May 8. No test strips observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions. Okay to operate- permit given.


• SHELL QUICK MART GGHA LLC, 7001 Sheridan Road. Date of inspection April 27. Jalapenos (44 degrees F), diced onions (45 degrees F), and banana peppers (44 degrees F) in pizza prep cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed container of seasoning not labeled. Food not in the original packages for use in establishment must be identified with the common name of the food. Observed boxes of food being stored on the floor in the walk in cooler. Boxes of food should be stored at least 6 inches off of the floor. Observed used wiping cloths sitting on the counter tops. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment. No test strips observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions.


• SHELL QUICK MART GGHA LLC, 7001 Sheridan Road. Date of follow-up inspection May 7. Observed used wiping cloths sitting on the counter tops. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment. No test strips observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions.


• LITTLE CAESAR’S, 2300 W. 28th Ave. Date of inspection into complaint May 19. No violations pertaining to complaint during inspection.


• JO ANN’S, 4002 Old Warren Road. Date of opening inspection May 13. This establishment okay to operate.


• PINE BLUFF CONVENTION CENTER, #1 Convention Center Plaza. Date of inspection May 13. Observed openings in bottom of back door. All outer openings of a food establishment should be protected against the entry of insects and rodents.


• WATSON CHAPEL HIGH SCHOOL, 4000 Camden Road. Date of inspection May 12. Observed a box of single items in storage area stored on the floor. Items must be stored at least at 6 inches above the floor to prevent contamination. Single items was removed from floor, during time of inspection.


• WHITE HALL HIGH SCHOOL, 700 Bulldog Drive, basketball concession stand. Date of inspection May 12. Thermometer needed in refrigerator in dry storage room. Ambient air and water temperature measuring devices should be accurate within 3 degrees Fahrenheit of the intended range.


• WHITE HALL HIGH SCHOOL, 700 Bulldog Drive, football concession. Date of inspection May 12. Observed several dead insects throughout home and visitor side concession stand on the floor. Dead or trapped birds, insects, rodents, and other pests shall be removed from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests. Counter tops in visitor side concession are unclean and need to be cleaned. Ceiling in home side dry storage is in disrepair. The physical facilities shall be maintained in good repair.


• WHITE HALL MIDDLE SCHOOL, 8106 Dollarway Road, concession. Date of inspection May 12. Personal fans in kitchen have visible residue and should be cleaned before using.


• CHEF LEE, 502 MALLARD LOOP. Date of inspection May 19. Two pans of raw meats, covered, above produce in walk in cooler. This Produce is to be cooked to 165 degrees before serving. Keep raw meats below and away from items that may be consumed raw when in storage. Corrected during assessment. Can opener and blade visibly soiled. Clean and sanitize all in use food contact surfaces at least every four hours when in use. Did not find ambient air thermometers in all the food coolers. Keep them visible at all times. Saw no probe thermometer to check internal cooking temperatures. Get prob thermometer. Bulk containers not labeled. Food not in the original packages for use in Establishment must be identified with the common name of the Food 5/20/2020 37 3-305.11 NC Bulk container lids not on containers. Keep lids firmly on containers when not in use. Several damp wiping cloths laying about preparation areas. Rinse in use wiping cloths in a sanitizer solution between tasks. Saw dust press board on top of chest freezer being used as a work surface. Replace it with a durable, cleanable material. Observation: Saw no sanitizer test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. Ice machine, walk in cooler door and handles and other equipment visibly soiled. Clean equipment as often as needed to stay clean to sight and touch. Observation: Corrective Action: Areas of preparation and storage in various states of disrepair. The PHYSICAL FACILITIES shall be maintained in good repair. NC Observation: Areas of preparation and storage visibly soiled. Corrective Action: Clean the physical facilities as often as necessary to keep them clean.


• BRIGGS BAR B QUE COOKING, 2221 S. Olive St., Ste J. Date of inspection May 11. Out of soap at hand sink. Provide an adequate supply of hand cleanser (liquid, powder or bar) at each hand-washing sink. Corrected during assessment. Out of paper towels at hand sink. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each hand-washing sink in food preparation, toilet and ware-washing areas. Corrected. Thermometers were not seen in all food coolers. Keep them visible at all times. Cooking equipment outside is not enclosed as per ADH Policy. Enclose outdoor cooking equipment as per policy. Wiping cloths laying about preparation areas. Rinse in use wiping cloths in a sanitizer solution between tasks. Reusing single serve pans/.Single service items must not be reused. Entire preparation visibly soiled. Clean as often as necessary. Trash and a burn pile behind building needs to be cleaned up and kept clean. Observation: Preparation areas in disrepair. Corrective Action: The PHYSICAL FACILITIES shall be maintained in good repair. Observation:Preparation areas visibly soiled. Corrective Action: Clean the physical facilities as often as necessary to keep them clean. All cooking surfaces not under vent system. Follow AR Dept. of labor Regulations for vent hood systems. Observation: USA FOOD PROGRAM shows, “business has expired license.” Corrective Action: It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501-661-2171 to ensure that you are in compliance with the law.


• GO DUCKIN LLC Address: 10501 U.S. 63. Date of inspection April 23. No hand soap observed at hand washing sink in kitchen area. Provide an adequate supply of hand cleanser (liquid, powder, or bar) at each hand washing sink. Soap was provided at hand washing sink during inspection. Ranch dressing (44 degrees F) in front deli cooler, burrito (46 degrees F) and boiled egg (44 degrees F) in reach in refrigerator by three compartment sink and banana peppers (44 degrees F) and sausage (46 degrees F) in pizza cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed a chemical container storing water for pizzas. A container previously used to store poisonous or toxic materials may not be used to store, transport, or dispense food. Chemical container was discarded during inspection. Observed lettuce being put directly into serving containers before washing. Raw fruits and vegetables shall be thoroughly washed in water to remove soil and other contaminants before being cut, combined with other ingredients, cooked, served or offered for human consumption in Ready-To-Eat form. Lettuce was washed during inspection. Observed single use containers being reused. Single use containers should not be reused.


• GO DUCKIN LLC Address: 10501 U.S. 63. Date of follow-up inspection May 11. Barbecue loaf (44 degrees F) and ham and cheese loaf (45 degrees F) in front deli cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.


• DOLLAR GENERAL STORE, 1010 Sheridan Road, Redfield. Date of inspection March 25. Observed paper plates stored on the floor. Paper plates must be stored at least six inches above the floor to be in accordance to regulations.
