Food Safety Nov. 19, 2023

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

AR DEPT OF CORRECTION TUCKER, 2400 State Farm Road, Tucker. Date of inspection Nov. 15. Gravy (71 degrees F) and sausage (52 degrees F) in the walk-in cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Gravy and sausage were discarded during the inspection. Observed an opening at the bottom of the back door in the dry storage room. All outer openings of a food establishment should be protected against the entry of insects and rodents. Observed some nozzles on the three compartment sink leaking. Sink fixtures should be repaired so that they are not leaking.

AR DEPT OF CORRECTION MAX UNIT, 2501 State Farm Road, Tucker. Date of inspection Nov. 15. Some parts of the ceiling especially around the vent hood area and in the ware washing area are in disrepair. The PHYSICAL FACILITIES shall be maintained in good repair. Current vent hood is not adequately filtering all steam through the system. Vent hood should be repaired to pull enough air through the system to adequately filter the kitchen.

RISHI LLC dba FAST LANE EXPRESS PINE BLUFF, 1502 E. Harding Ave. Date of inspection Nov. 1. No hand soap observed at the hand washing sink in the restroom. Provide an adequate supply of hand cleanser (liquid, powder or bar) at each handwashing sink. No hot or cold running water observed in the three compartment sink. Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the RETAIL FOOD ESTABLISHMENT.

RISHI LLC dba FAST LANE EXPRESS PINE BLUFF, 1502 E. Harding Ave. Date of follow-up inspection Nov. 16. No violations reported.

PINE BLUFF FOOD MART LLC, 3402 Old Warren Road. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed hand sink blocked during time of inspection. A handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Items were removed during time of inspection. Observation: Walls and floor area still soiled and needs to cleaned. Corrective Action: Clean the physical facilities as often as necessary to keep them clean.

A AND S QUICK MART, 1416 S. Blake St. Date of inspection Nov. 3. Hot dog (44 degrees F) in the walk in cooler is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. No test strips observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions. Two compartment sink noted in establishment. Three compartment sink needed to properly wash, rinse, and sanitize dishes. Restroom door is not self closing. A toilet room located on the PREMISES shall be completely enclosed and provided with a tight-fitting and self-closing door. Permit posted has expired. It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501-661-2171 to ensure that you are in compliance with the law.
